Coconut water is all the rage, step up your mojito game with this easy, refreshing coconut water mojito!
Serves 4 | Prep 10 minutes
2 bunches of mint leaves (reserve some for garnish)
2 cups bottled fresh, cold coconut water
6 tablespoons freshly squeezed lime juice- fresh squeezed is best!
4 oz white rum
3 tablespoons sugar
2 cups ice
“Muddle” (lightly crush to release the flavor) the fresh mint leaves by pounding and twisting on the mint leaves lightly with the back of a spoon in a bowl. Add the coconut water, lime juice, white rum and sugar to a bar shaker or tall glass to mix. Stir/shake to combine well or until the sugar dissolves. Add the ice to a fresh glass, pour mojito mix over ice, garnish with fresh mint sprigs and serve your tasty coconut mojito immediately for best results.
1 oz simple syrup (1 cup water to 1 cup sugar, dissolve in saucepan over medium heat)
2 fresh strawberries per drink
2-3 sprigs torn mint leaves
fresh mint sprigs for garnish
1 oz fresh lime juice
2 oz light rum
3-4 ounces soda water
In a chilled, tall glass, muddle (lightly crush to release the flavor) the simple syrup, strawberries and torn mint leaves together with the back of a spoon or muddler. Crush the strawberries and mint leaves well.
Stir in the lime juice and rum. Fill the glass with ice and top off with soda water. Gently stir.
Garnish with mint sprigs & strawberry slices.
